Ingredients:

For the cauliflower:

• ½ cup all-purpose flour
• ⅓ cup cornstarch
• ¾ teaspoon baking powder
• 1 teaspoon salt
• 2 eggs
• 3 tablespoons soy sauce
• 1 tablespoon rice vinegar
• ½ cup neutral oil (like peanut or vegetable)
• 1 head cauliflower, cut into bite-size florets

For the sauce:

• 3 tablespoons rice vinegar
• 3 tablespoons soy sauce
• 2 teaspoons hoisin sauce
• 1/4 cup water
• 3 tablespoons sugar
• 1 tablespoon cornstarch

Instructions:

1. In a medium bowl, whisk the flour, cornstarch, baking powder, and salt to combine. Separately, whisk the eggs, soy sauce, and vinegar. Slowly pour egg mixture into the flour, whisking constantly.

2. Heat the oil in a medium cast-iron skillet over medium-high heat until very hot.

3. Dip each piece of cauliflower in the batter to fully coat, then carefully place in the oil. Pan-fry the cauliflower until golden on all sides. Transfer to a plate lined with paper towels.

4. To make the sauce, combine all ingredients in a medium saucepan and heat.

5. Toss the cauliflower to coat. Serve immediately with a side of steamed rice.
